They have no butter or eggs, and you can customize the recipe by adding in a handful of raisins, chopped walnuts, flax seeds, or shredded coconut, or by pressing a few blueberries into the top of each muffin right before baking. These came out very well. I used 1 tablespoon of white vinegar in a cup of milk and let it sit for 10 minutes in place of buttermilk but otherwise followed the recipe exactly. These came out much better than I was expecting and are probably the best corn muffins i've ever had rivaling even my grandmother's. Very happy with the result.:) The corn syrup is a nice extra if you want it to set nice but it does make it a little too sweet (I love sweet things) I would decrease the sugar to 1 1/4 cup if 1 tbl of corn syrup is added. It really needed extra vanilla. Directions. In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. DIRECTIONS. Preheat oven to 425 degrees. Combine corn meal, flour, sugar, baking powder, and salt. Add milk, egg, and oil. Beat for 1 minute. Pour into an 8 inch square pan, or spoon into 12 prepared muffin cups. Bake at 350° until muffins test done, 25-30 minutes.
